Confession: I hate cheese!

If you know me, you’re definitely not surprised. I used to literally have a fear of cheese. When I was in middle school my best friends decided to stuff my locker with cheese on my birthday. I refused to go to my locker and left the cheese there over Christmas break. When we came back to school all you could smell was moldy cheese in the hallway near my locker.

So you’re probably wondering why I’m sharing a recipe for queso if I dont like cheese. My issue is with unmelted cheese. There’s two times I’ll eat cheese: pizza on cheese or melty cheese (queso or nacho cheese). And let’s be honest, is nacho cheese really even cheese anyways??

It was about time I created a healthier alternative for our taco nights. I did a few searches and found a few similar recipes that are paleo, vegetarian, vegan, dairy free, oil free, grain free, and whole 30.

Dairy Free Cashew Queso

Servings 2 cups

Ingredients

  • 1 cup cashews
  • 3 tbsp tomato paste
  • 1/3 cup nutritional yeast
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1 cup water
  • 1/4-1/2 cup salsa
  • 3/4 tsp sea salt
  • 2 tbsp lemon juice

Instructions

  1. Add all ingredients in a food processor or high speed blender and blend until smooth.
